The Art of Beer Cooking: Beer Cheese Soup

The beer recipe this week combines two of Wisconsin’s finest ingredients: cheese and beer. Beer cheese soup is a Wisconsin tradition, so why not try making it yourself?

On these cold winter nights in the midwest having a delicious bowl of soup can really hit the spot. This soup in particular is very rich and is sure to comfort you through the cold. The combination of beer and cheese works well and really elevates both flavors. Top it off with popcorn. Yes, you heard me correctly! Beer cheese soup is traditionally served with popcorn on top. Put your own twist on this by coating the popcorn with some spices to add another flavor profile.

If you like spicy, I would suggest adding more hot pepper sauce than is recommended. As for the beer you use, lets keep it traditional and go all Wisconsin. Try any of the New Glarus varieties or I have heard brown ale’s work quite well.
